El Comité Estatal de Sanidad Acuícola de Yucatán A.C. (CESAY), se formó en el año 2006 a partir de una Asociación Civil integrada por productores acuícolas del Estado dedicados al cultivo de tilapia, camarón y peces de ornato en colaboración con CINVESTAV Unidad Mérida, los cuales reconocieron la necesidad de contar con un organismo capaz de hacer frente a los peligros de enfermedades en animales acuáticos y asegurar el estatus sanitario en Yucatán.
